At the washing station, the ripest berries are hand-sorted and dried on raised drying beds, with the berries turned regularly for three weeks. Intensive work, but this painstaking process contributes to the coffee's incredible flavor. It is a funky coffee with notes of dessert wine, cherry and dark chocolate.
