Unlike the previous microlot, this coffee does not come from a single farmer. The farmers who supply the Fugi washing station in Rwanda -a supplier of our partner, Baho Coffee- do not produce enough coffee for such a micro lot individually. But together they get the job done! Together with the dedicated and knowledgeable manager Aphrodice, the farmers work to produce the highest quality coffee. After picking, the finest coffee cherries are selected and anaerobically fermented. The cherries are kept in an airtight barrel -in this case for 120 hours!- which, among other things, creates lactic acids that give the coffee a distinct and funky character.

All coffee undergoes some form of fermentation. The longer and more intense that fermentation is, the more it contributes to a characteristic flavor and aroma. Anaerobic fermentation is next level and is usually applied to smaller quantities of coffee. That makes the coffee perfect for a micro lot. This juicy, friendly coffee has distinct flavors of raspberries and chocolate. We also detected a hint of orange natural wine. Exciting!
